Foodie Friday – Bill’s Bourbon Balls

1/2 cup butter (margarine) softened

3 Tablespoons of sweetened condensed milk.  We use Eagle  Brand

1/3 cup and 2 Tablespoons of Bourbon.

7 1/2 cups of powdered sugar or 1, 2lb bag.

Mix the softened butter, sweet condensed milk, and bourbon in a bowl and mix it up.

Put about half the sugar in a mixing bowl and make a hollow center.  Put in the liquid mixture and start stirring.

While stirring ad the rest of the sugar until it becomes a “dough” that you can then push it around with your hands to remove most of what is left on the side of the bowl.

Then, pinch out enough to roll in your hands to make a small ball about the size of a “large” marble shooter. (You can see the size in the pic)

Put this ball on wax paper on a tray and then let them chill overnight in the fridge.  I put them outside during December because in Fargo it is better than a fridge :). If you do this then you don’t have to keep them overnight. Maybe just and hour or two.

Dipping Chocolate

1   12 ounce package of semisweet chocolate morsels

4   Tablespoons of melted paraffin.

With the stove on a “low heat”, melt these two together in a double boiler until the chocolate becomes dipping liquid. If you don’t have a double boiler just put a smaller pan inside of a larger pan with water you can heat. Put the chocolate and paraffin in the inside pan and that will melt the chocolate. (DO NOT USE A HIGH HEAT). I did this once and the chocolate became hard and I couldn’t dip them.

Put a toothpick into the bourbon ball and dip it in the chocolate. Take it out and use a pecan to push it onto your candy tray.  You will see that I put them in little paper baking cups.  This makes it easier to store and separate when making a “gift” to take to someone. You can also use the same tooth pick over and over.

If the bourbon balls start to get a little warm so they are hard to dip just put them back into the fridge or outside so they can chill some more.

Finally, taste test as much as you want.
